In addition to some housework and crafting (I painted a lot of shit metallic purple, I'm a weirdo, what can I say?) I decided it was time to come up with a new recipe. And when I say I decided, I really mean that I had a couple of bananas that were on their last leg and it was use em or send em to that big trash can in the sky, er, garage.
So, without further ado, I present in all their B-A-N-A-N-A (you know I just totally Gwen Stefani-d that) glory. . .
Cocoa Banana Muffins
Let me begin with this are mildly cocoa enhanced, not a double super chocolate molten cake style muffin. We are talking slight chocolatey enhancement. They are pretty darn tasty muffins. We really liked em.
Ingredients:
2 eggs
1/2 cup milk
1 stick of butter softened
3 tablespoons vegetable oil
1 tablespoon baking soda
1 teaspoon vanilla
2 ripe bananas
1 cup brown sugar loose not packed
1 1/2 cups flour
2 teaspoons unsweetened cocoa powder
Preheat oven to 400 degrees and fill muffin tins with liners. In a medium mixing bowl mash bananas and butter together using a hand mixer, or if you are lucky person, using your fancy pants standing mixer. Add vegetable oil, brown sugar, vanilla, baking soda, and cocoa powder and continue to mix until blended. Next blend in the two eggs. Add in milk and flour alternating until mixed together. Scoop into prepared muffin cups with an ice-cream scooper or if you have some fancy cupcake filling kitchen device, use that thingy. Bake for 17 minutes. As soon as they are cooled enough to handle them transfer to wire cooling rack. Makes about 16 muffins, sorry that is a random number, but hey, it's life.
During the mixing process the song 'Ballad of a Paralyzed Citizen' by The Faint shuffled on. So, hey The Faint, this muffin's for you!
